Marshmallow Muffins

These are most definitely my favourite cakes in the world. They combine marshmallows, chocolate chips, and chocolate cake, all in a humble muffin. They also look quite pretty, as when the go in the oven with the marshmallows, the marshmallows melt and flow out (don’t worry, it won’t make a mess of your oven) and there are pink and yellow blobs on a chocolate chip muffin. Go on! Have a bash at them, they are really quite nice, and not too difficult to make.

What You Need

280g self-rising flour

6 tablespoons cocoa powder

90g caster sugar

1 egg

300ml milk

70g margarine

120g chocolate chips

80g mini marshmallows

These ingredients are enough to make roughly 12 muffins, depending on how big your muffin cases are

How You Make It

Preheat your oven to 190 degrees C and 180 degrees C for fan assisted ovens and get your cupcake tray ready by filling them with muffin cases, the ones you don’t need can be put back later.

In a large mixing bowl, add your flour, cocoa powder, and sugar, and mix them together. Now make a well in the centre; this is for when we put the wet ingredients in.

Put the margarine in a microwavable bowl and melt it in the microwave. In a separate mixing bowl, whisk the egg and add the milk and add the melted margarine until thoroughly blended.

Now in the well you made earlier in the dry ingredients, pour in the wet ingredients and mix with an electric mixer (it is fine if you don’t have one, just use a wooden or metal spoon – you will just have to mix for a bit longer). Mix them for about 3 minutes (and 5 minutes if you are using a wooden or metal spoon) until smooth, combined, and there are no lumps.

Next it is for the marshmallows and chocolate chips (the fun part, in my opinion): add them into the mix. If you are using an electric mixer, you will have to stop using that now as if you do carry on, you will break the marshmallows and chocolate chips. Using a wooden or metal spoon, gently combine the marshmallows and chocolate chips with the rest of the mix, being careful not to break them up.

Now, spoon the mixture, using the same spoon you used to mix the marshmallows and chocolate chips in with the rest of the mix, into the muffin paper cases and into the oven they go for 20-25 minutes.

When you get them out, they should be risen by about 30% and firm.

You can now enjoy them as in my opinion these don’t really need decorating, as they already have are pretty and if you decorate them, you will be overcrowding them, but a little edible glitter won’t hurt!
